Product description.

Our ground beef is made from 100% New York State-raised cattle, processed locally to ensure freshness and traceability. It contains no fillers or additives and meets USDA requirements for lean ground beef. Ideal for institutional recipes including meatballs, taco fillings, and baked entrées, it offers consistent yield and quality. This product is fully creditable as a Meat/Meat Alternate in Child Nutrition Programs and supports New York’s farm-to-school and NYS 30% initiatives.

Prep instructions.

1. Thawing (if frozen):
Thaw under refrigeration at or below 40°F for 24–48 hours. Do not thaw at room temperature.
2. Cooking:
Cook ground beef to a minimum internal temperature of 160°F. Use a calibrated food thermometer to verify.
3. Cooking Methods:
• Oven: Spread evenly on a sheet pan, breaking into crumbles; bake at 350°F until fully cooked.
• Skillet/Griddle: Cook over medium-high heat, breaking up with a spatula until browned and cooked through.
• Steamer or Braiser: Use for large-batch prep; stir regularly to ensure even cooking.
5. Holding:
Hold at 135°F or above for hot service or cool to 41°F or below within 2 hours for cold storage.
