Cooking the Chicken:
Oven Method: Preheat the oven to 350°F (175°C). Spread the diced chicken in a single layer on a baking sheet. Lightly season with salt, pepper, or other spices as needed, and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Stovetop Method: Heat a large skillet over medium heat and add a small amount of oil. Add the diced chicken in batches to avoid overcrowding the pan. Cook, stirring frequently, for 8-10 minutes, until the chicken is cooked through and reaches 165°F (74°C).
Steaming (for large batches): Place the diced chicken in a steamer tray and steam for 15-20 minutes, checking to ensure the internal temperature reaches 165°F (74°C).
Holding and Serving:
After cooking, hold the chicken in a warming tray or hot holding cabinet at 140°F (60°C) until ready to serve. Ensure the chicken is served within two hours for optimal food safety.
Portioning:
For school meals, portion the diced chicken according to the meal guidelines, typically 2-3 oz per serving.
